 If you are not familiar with the delicious St.Louis lets bring you up to speed. This a pork rib that has been cut down from the spare rib. Not to be confused with the baby back rib which is cut from the top of the rib connecting the spine. St Louis ribs are a center cut of the rib, were the bones start to flatten out. Now you may ask why are the called St.Louis ribs they are also called Kansas City ribs.
