Lets talk andouille, it is a spicy coarsely ground sausage in a natural casing then smoked...
This hot little sausage is very universal in use. Pretty much any sausage recipe that that needs a kick andouille will do. Most people use andouille in jambalaya, gumbo, mix it into their burgers or omelets and even BBQ sauces.
So come in and try a sample of our own homemade andouille, we would love your feedback on our new recipe..

Happy New Year.
I would like to thank everyone for all of their business through 2009. Thank you for the wonderful attempt to turn my non-profit organization into a profitable one.
For 2010, I would like to make Troy Meat Shop a more personable and comfortable shopping experience. To start I would like to share one of my New Year resolutions for Troy Meat shop.
After a brief hiatus of blogging I am going to make a resolution to blog weekly.
Following an in depth meeting with the crew more goals shall follow.
Special thanks to the crew (Shane, Christine and Bill) for all of their help through the holidays.
