Happy Fourth Of July ** Come and Get It**

Hello my fellow Meat Marketeers,
First off I would like to say sorry, I have been slacking on my web site work.. It may be
because of my dislike of computers or my A.D.H.D.. Any who i am back in action..
I have a special guest blogger... My sister she is in town from Cali for her engagemet party...
Congrats to her.. Finally someone stepped up!!!!! wow I was getting nervous.... just kidding..
If you know my sister (Holly) you would know she is a real catch... She is super talented and
the reason I want her to blog on my site... She is by far the BEST cook I have ever met..
The girl should have her own show!!!!!!!
SO WITH NO FURTHER ADO
Wow that is going to be hard to follow, let me grab my glass of wine and get some liquid courage going. That is very nice of my brother, I bet he is going to expect me to come in and work tomorrow or something. Anyway... Fourth of July is just around the corner. Pack up a picnic and the family then head down to the park to see the fire works. Usually the fourth of July is a day of Grilling out in the sun and munching on some old time favorites. There is nothing wrong with a good old hamburger and hotdog, but there are ways to change it up to make your Fourth of July a bang in your picnic basket. Maybe this is the year to try a pork burger? Why not give this little guy a try and just keep some hotdogs on the side for the picky folks.

Chipotle Pork Cheeseburgers
~Ingredients
1 lb ground pork (not lean)
2 teaspoons minced chipotle in adobo plus 1 teaspoon adobo sauce
2 garlic cloves minced
4 slices Muenster cheese
4 hamburger buns, toasted
¼ cup mayo
1 large tomatillo (1/4 lb) husked and rinched then sliced
½ small avocado, sliced
½ cup cilantro sprigs

~prep
Gently mix pork, chipotle, garlic, and a scant teaspoon salt until just combined. Form into 4 (1/2-inch-thick) patties.
Oil grill rack, grill patties, covered, 4 minutes.
Flip patties and top with a slice of cheese. Grill, covered, until just cooked through, 1 to 2 minutes more.
Spread buns with mayonnaise and assemble burgers with tomatillo, avocado, and cilantro.
Side note- Burgers can be grilled in an oiled hot 2-burner grill pan over medium heat, about 10 minutes total.
That is just one little idea to get you started on putting some fireworks on a plate. Change up your regular burger with different ground meats; chicken, pork, buffalo. They all can be used instead of beef. Change up your traditional toppings with a little flare. Use different cheese and maybe put some spices in your mayo or ketsup. Things will be kicking and maybe you could even come up with a new family 4th fav. Eat up, and let me know what you think.

Happy

Ground Cow!!!! MOOO

hello, everyone spring is upon us and it is time 2 start thinking about your grill.. More important what you are going 2 put on it....

Lets talk HAMBURGER or to be more specific ground chuck... Hamburger has been around 4 ever. The huns would take scraps of meat press them together and put it under the saddle of their horse then ride mmmm. That sounds tasty after the ride they could eat there tenderized meat raw... I know that is sounding great 2 ya.. I believe the name we no now HAMBURGER comes from a German town Hamburg were they would grind up scraps into patties,it was the poor mans food no wonder i like it so much...

We have come along way since them I cut up whole chucks and rounds 2 go into our ground chuck AKA HAMBURGER.. Not scraps n fat good lean meat.. I don't no if u buy ground chuck @ any other place(shame on u) but if u buy some troy meat shop chuck u will no the difference..We cut and grind all our chuck in house fresh everyday... I don't want 2 mention any names but there are alot of places that don't have grinders!!! Were are they getting that stuff from???? Check the label Canada ,Mexico!!(it may say enhanced) yiikes!!! Is that what u want 2 eat sum ground what ever from MEXICO!!!!! So if your worried about what u put in your body or your kids body stop in... Our ground chuck is 85% lean with absolutely nothing added 2 it...
